3 Step Vegan Mac & Cheese

  • 1 cup nutritional yeast
  • 1 tbs garlic powder
  • 1 tbs onion powder
  • 1 tbs salt
  • 1/2 tsp pepper
  • a dash of cumin
  • a dash of parsley
  • 2 carrots
  • 2-3 red potatoes
  • 1/2 cup almond milk
  • 1/2 cup (plus more if needed) water

First combine the spices in a small bowl and set aside for later.

Step one: boil the vegetables until soft and save a little bit of the cooking water. Since it has a lot of the starch from the potatoes, it will make the sauce seem rich.

Step two: Once the veggies break when you touch them lightly with a knife and are SUPER tender, add to a blender and pour the spices in and all of the milk. The water just depends on how wet your veggies are so add a little at a time until its a creamy consistency.

Step three: Boil your noodles and pour over!
