Green Pepper and Onion Sandwiches

These sandwiches are my favorite because the carmalized onions bring in sweetness, the avocado a little fat and the mustard makes it perfectly balanced.

  • 1 green pepper
  • 1 sweet onion
  • 1 avocado
  • 1 tomato
  • Brown mustard
  • Rolls of choice
  • Dash of olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Onion Powder
  • 1 tbs. Vegan mayo (if desired)

Start by frying the peppers in a pan with a little olive oil, salt, pepper, garlic powder and onion powder. Keep in pan until the onions start to brown checking every minute or so.

Toast the inside of the bread. I prefer ciabatta bread because it is almost always vegan, but you can use whatever you’d like!

Open and mash the avocado, if not desired consistency, add a bit of vegan mayo to make it more spreadable.

Put the avocado spread on one slice of bread, mustard on the other and fill with the browned peppers and onions and a couple slices of tomato and enjoy!
